i know how challenging it can be to get a toddler to eat her veggies, particularly green ones. well one way to do it is to sneak it into some other kind of deliciousness - such as adding spinach to a fruit smoothie. maggie has this almost every morning for breakfast. it is so quick and easy to make plus great for on the go.
1/2 cup frozen strawberries
1/4 cup frozen blueberries
1/4 cup fresh OJ
1/2 cup plain lowfat yogurt (or greek yogurt)
handful of spinach
1 teaspoon of flaxseed oil (optional)
mix all ingredients together in a blender until smooth. (i use a magic bullet type blender for easy clean-up).
